Chocolate Cake (Devil's food)

  1. Put oven rack in lower position.
  2. Preheat oven to 350°F.
  3. Cover bottom piece of 6" spring lock cake pan with parchment, lock into place, and trim excess from outside.
  4. Repeat with second pan.


  1. In a large bowl, heat to melt:
    • 175g Butter.
    • 175mL Brewed Coffee.
  2. Mix in:
    • 100g 72% Chocolate Bar, broken into pieces.
    • 40g Cocoa Powder.
  3. Mix in:
    • 200g Sugar.
    • 20g Molasses.
    • 5g Vanilla Extract.
    • 2g Salt.
  4. Mix in:
    • 125g Flour.
    • 7g Baking Soda.
    • 3 Eggs.
    • 2 Egg Yolks.


  1. Pour half of batter into each pan.
  2. Bake for about 30 minutes (use toothpick test).
  3. Cool, still in pans, for at least 1 hour.
  4. Remove from pans.
  5. Cool on a rack.


  1. With a bread-knife, remove domed top of each cake, and set aside for snacking.
  2. Cover one cut surface with chocolate frosting, sprinkle with Chocolate Chips, and top with the other cake, cut-side down.
  3. Coat top and sides with frosting.
  4. Sprinkle top with:
    • 75g Chocolate Cookie Crumbs.
  5. Refrigerate.
