Tea Biscuits

  1. Preheat oven to 425°F.
  2. Ingredients:
    • 300 g (2 cups) — Flour
    • 40 g (3 Tbs) — Sugar
    • 15 g (1½ Tbs) — Baking Powder
    • 1½ g (¼ tsp) — Salt
    • 80 g (⅓ cup)— Butter (cold)
    • 250 g (1 cup) — Buttermilk (or milk with a spoonful of vinegar)
  3. Butter and flour the cookie sheet.
  4. Combine the flour, sugar, baking powder, and salt.
  5. Cut in butter until it's in very small pieces.
  6. Add milk and mix dough with fingers.
  7. Knead half a dozen times.
  8. Separate into ten or twelve pieces, shape into pucks, and lightly dust with flour.
  9. Bake for 10 minutes.
  10. Turn over and bake for 5 to 8 minutes more.
