Chocolate Cake (Devil's food)
Preparation
- Put oven rack in lower position.
- Preheat oven to 350°F.
- Cover bottom piece of 6" spring lock cake pan with parchment, lock into place, and trim excess from outside.
- Repeat with second pan.
Batter
- In a large bowl, heat to melt:
- 175g Butter.
- 175mL Brewed Coffee.
- Mix in:
- 100g 72% Chocolate Bar, broken into pieces.
- 40g Cocoa Powder.
- Mix in:
- 200g Sugar.
- 20g Molasses.
- 5g Vanilla Extract.
- 2g Salt.
- Mix in:
- 125g Flour.
- 7g Baking Soda.
- 3 Eggs.
- 2 Egg Yolks.
Bake
- Pour half of batter into each pan.
- Bake for about 30 minutes (use toothpick test).
- Cool, still in pans, for at least 1 hour.
- Remove from pans.
- Cool on a rack.
Construct
- With a bread-knife, remove domed top of each cake, and set aside for snacking.
- Cover one cut surface with chocolate frosting, sprinkle with Chocolate Chips, and top with the other cake, cut-side down.
- Coat top and sides with frosting.
- Sprinkle top with:
- 75g Chocolate Cookie Crumbs.
- Refrigerate.
Notes
- This recipe for Frosting will make more than is needed, so you can use it on the retained cake domes as a snack.
- Make sure to use already brewed coffee, not coffee grounds.
