Marinara Sauce

Marinara is a traditional Italian sauce, served as a topping, or used as the basis of some other recipe.

This recipe makes about 1600g of sauce. Unused sauce may be frozen for later use.

  1. In a wide-as-possible fry pan, combine and heat until sizzling but not brown:
    • ¼ cup (50g) Olive Oil
    • 7 cloves (25g) Garlic (sliced and crushed)
  2. Stir in one of:
    • 2 28oz cans (1600g) San Marzano Tomatoes (crushed by hand)
    OR:
    • 1 28oz can (800g) Crushed Tomatoes
    • 1 28oz can (800g) Diced Tomatoes
  3. Stir in:
    • 1 pinch Crushed Red Pepper Flakes
    • 1 tsp Salt
  4. Float on surface until cooked and then stir in:
    • 1 sprig Basil
  5. Simmer and occasionally stir until sauce thickens (15–25 minutes). If it thickens too soon, add a little Water.
